Salty fettuccine!

It's alright to make mistakes :)

We did make a lot of mistakes today.
Maklumlah never try to cook this before.
Lab is on Thursday this week cause Raya Haji fell on Tuesday. 
Back to Tuesday for the next lab. I suddenly feel that they are to near to each other!

Attending a GDM case for this lab.

Mrs. AM is a 32 year old Sarawakian pregnant woman G2P0+1 who is diagnosed with GDM. She has gained about 17kg in her last trimester. The doctors have prescribed her with Insulin due to uncontrolled blood sugar. She is works as a Cashier at Giant which is 10 minutes away from her home.
Pre pregnancy weight: 88kg     Ht:175cm


Because she was overweight before pregnancy.
Because she is gaining six kgs more than the recommended weight gain for the third trimester.
Because she has GDM.
Because she is pregnant.
Because she is a Sarawakian.
We came up with the menu like this.

Apparently, i googled dishes served specially in Sarawak and includes them in all the main meals. Dishes that i have never heard of before this. Forget about trying. Now i have to cook it solely based on the recipe i have found online. Stress!

What i've planned to cook for lunch was Sarawak tomato fettuccine.
The original dish is called Sarawak tomato koay tew.
I substituted the koay tew with fettuccine because fettuccine is a low GI food. 
I was trying to include foods that have low GI in my menu planning but it seemed like they weren't appreciated. Lol. 

Anyway, i am still going to talk about my fettuccine.
The ingredients that we used were so many this time. They filled up an A4 paper.
And we have to cook them in three separate rounds.


1. Cook the fettucine and when it's cooked, stir fry it in a wok with sweet soy sauce. Set aside.



2. Stir fry some minced garlic in another wok and add in carrot and later fishcake and choy sam. Set aside.


3. Stir fry the remaining garlic, add in prawn and cuttlefish. Add in the chicken stock and all the seasoning (tomato sause, oyster sauce, sesame oil, sugar, sweet soy sauce, and etc.). Lastly add in corn flour diluted in water.


And taadaa..! This is unbelievably yummy :D Too salty though. Haha.

Fluid and texture modified diet next week.
Mine are 1500kcal low residue diet and 1800 kcal high fiber diet.
We are getting two cases too just because some groups get some pretty simple ones.
